When I was young my grandparents had a 1200 acre ranch where they raised cattle naturally. Ever since having that meat I don't think I could give it up and I think raising it that way and purchasing meat raised that way is super important. Have either of you ever read the book "Nourishing Traditions"? It changed the way I view a lot of food, but gave really interesting, scientific facts that I appreciated about all food including meat. I do however use the Nourishing Traditions starter recipe rather than this websites. I start with 1 c. of organic rye flour and 1 c. of filtered water (make sure you have no chlorine or it will kill the natural wild yeast) and mix it together. Every day I repeat this process and transfer the mixture to a new bowl covered with a thin hand towel with a rubber band over the bowl until I get 6 or 7 cups of starter. Then, I am ready to start the bread and use the leftovers to make something else yummy (I'm going to have to try some of Sarah's recipes--thank you!) and keep my starter going. Rather, what I find to be particularly intriguing and adoring about her stories, is the respect gentlemen had for ladies. I am saddened when I compare our courtship process (if you can even call it courting) to that of Austen's time period.
